Fuel up Friday - Ground Beef & Cabbage Stir Fry

Looking for a quick, easy, tasty and filling meal? Look no further. This stir fry requires a handful of ingredients and comes together in a matter of minutes. Perfect after a long week when you don't want to spend too much time in the kitchen.


Ground Beef & Cabbage Stir Fry

1 lb ground beef

1 bag/package coleslaw mix

2" piece of fresh ginger, grated or minced (optional)


Sauce:

2 tablespoons sesame oil

1/4 cup tamari (gluten-free soy sauce) or regular soy sauce

1 tablespoon rice vinegar

1 tsp Sriracha (if you like things spicy)


Combine ingredients for sauce.

Cook beef in skillet over medium heat until fully cooked and nicely browned. Mix in ginger if using.

Add bag of coleslaw to skillet and stir well. Cover and cook for 3-5 minutes. Remove cover, add sauce and cook until sauce has thickened and warmed through.

If you want to get fancy, you can garnish it with chopped green onion, cashews, peanuts or sesame seeds.
